I adore pasta alla Norma. We usually pan fry the eggplants and use ricotta but your version sounds lovely, too. Asiago is made here in my area 👌👌

This is one of my favorite pasta dishes. If you ever get a chance make it with ricotta salada. One year my father planted pumpkins but thought he planted watermelons. We waited all summer for those watermelons!

October is planting month so it is even more fun to think of growing something starting out in the fall. I will probably give it a go this year and hope for better luck.
