This is one of my favorite pasta dishes. If you ever get a chance make it with ricotta salada. One year my father planted pumpkins but thought he planted watermelons. We waited all summer for those watermelons!
October is planting month so it is even more fun to think of growing something starting out in the fall. I will probably give it a go this year and hope for better luck.
Another delicious and delightful post, Vicki! The pasta dish sounds perfect to make with some slightly overripe tomatoes on my counter. Looking forward to learning more about your mystery melon.🍈
I adore pasta alla Norma. We usually pan fry the eggplants and use ricotta but your version sounds lovely, too. Asiago is made here in my area 👌👌
Thanks, Sinus. I must admit that I had never considered where Asiago is produced. Thanks for that information from your part of the world!
I love that.... "air-brushed versions in the grocery store" and I might add usually pitifully tasteless.
Could not agree more!

I hope you at least enjoyed the pumpkins! Thanks for the tip on ricotta salada.
Who knew you could plant garlic?! You've piqued my curiosity and I can't wait to discover the mystery produce.

Thanks again Vicki, your recipe is printed and sitting beside a fresh batch of miniature medley tomatoes. I will pick up an eggplant tomorrow!
Hope you enjoy it, Sally! Thanks for letting me know that you are going to make the recipe.

Thanks, Ruth. I hope the deer don't find it!
Lovely as always, Vicki and love your painting!
Thanks Jolene!
Tonight's dinner problem solved
Beautiful post, as always. Pasta alla Norma sounds like the perfect end-of-summer dish!
Thanks, Sam!
Yes! We all do.
Yum! Also, I need a Shirley in my life.
