I love your drawing "Across from the Grange" just beautiful. I often make Butternut squash soup but haven't tried it with coconut milk, which I will do now! The recipe I use calls for topping the soup with toasted pumpkin seeds and a drizzle of pumpkin seed oil. The pumpkin seed oil (available at ShopRite) is pricey, but this is a delicious touch.

I'm sorry to hear the class was cancelled, have they set a new date? Love the sound of your simple soup, that's exactly the kinf of food I make for myself on a Tuesday evening, when boyfriend (who doesn't like soups unless they contain lentils) is away.

Your tale of cracking open the coconut was amusing, and admire your resourcefulness! I grew up with my parents buying fresh coconuts and opening them with a screwdriver and mallet. It always put a some stress on the marriage but then we enjoyed the milk and the raw "meat." Their efforts to crack it open was part of the whole experience and made it more special.

Was in a similar showdown with a coconut. Son came in. Went down to the basement. Pulled out the sledgehammer. Came up, braced it between 2 dutch ovens. Problem solved! New problem dent in kitchen floor that's still there. Wonderful story and painting as always.

One of my favorite soups is butternut squash. I have yet to try any type of coconut from the actual shell. I also added both Ruth and Dash of Prosecco links in my blog post yesterday. Seems soups are on everyone's mind as the winter covers us all. Thanks Vicki!

Soup is a thing this week, right? Thanks so much for the mention and for sharing the recipe for butternut squash soup, which I love! Of course soup makes total sense, with snow days and storms coast to coast! Even our Sierras are due for a much-needed dusting in a few days.

I think your coconut adventures are a crack-up (ahem). I never thought of freezing coconuts to break them open. As kids, we used to drive a screwdriver or icepick into the eyes, decant the juice into our open mouths, then either drop them hard on the cement or pound them to smithereens with a sledgehammer. Then we’d dig the meat out of the broken pieces with dull knives. Such fond memories. Must do this again and try your recipe! Thanks for another fine post, Vicki!🥥

Thanks Ruth! I missed the last 10 minutes of the meeting yesterday when our power cut out. Wild weather coast to coast, I guess. We had heavy rain and high winds with many roads closed today. Moe soup weather!
