As for favorite recipes, the NYT Perfect Buttermilk Pancakes recipe is my go-to. The recipe produces light and fluffy pancakes that are enhanced with a generous sprinkle of blueberries.
Pancakes are a great winter breakfast. My mom always made animal pancakes for myself and brother. She did cats, dogs, elephants (if you squinted hard not to see a rhino), and cows. I used to read him Eric Carle’s classic, The Very Hungry Caterpillar, but never Pancakes, Pancakes! I also never tried almond flour banana pancakes. They’re next on my list! 🍌🥞💕
