Mango Salsa
One afternoon while walking in the park my friend Madeline mentioned that she had recently cooked swordfish for dinner and that it had been easy to prepare and delicious. Salmon is the main fish course that I rely on at least once a week as it hard to go wrong with in terms of flavor. Swordfish is rather expensive, so I waited until it was on sale. When dinner time rolled around my confidence level dropped as I feared that I might overcook the fish or that it would be bland. Luckily, I had a ripe mango on the kitchen counter and remembered having mango salsa served with fish tacos at a local Mexican restaurant. I looked online for mango salsa recipes and had to improvise a bit since some of the ingredients I either don’t care for or didn’t have on hand. The mango salsa was definitely a nice compliment to the swordfish and a needed pop of color.
Ingredients
1 Mango
1/4 Red Bell Pepper
2 T. finely chopped Red Onion
2 T. chopped Parsley
1 t. freshly grated Ginger
Directions
Peel and dice the mango. Dice the red pepper, onion and parsley. Toss everything together in a bowl with the ginger. Taste. Adding a squeeze of lime is optional. Also, you may prefer cilantro instead of parsley. What could be easier?
