Fruit Cobbler
Summertime brings us delicious fresh fruit, and the perfect ingredients for a warm cobbler served straight out of the oven accompanied by vanilla ice cream or whipped cream. Peaches are as as lovely to draw as they are to eat with their combination of yellow, pinks, and oranges. Straight from still life to the kitchen to be sliced up with a combination of berries and a simple oatmeal, crumbly topping for an easy dessert that is equally colorful as it is tasty.
Fruit Cobbler Ingredients
4 cups of fresh fruit. Blueberries, raspberries, peaches and bing cherries are good choices.
2 Tablespoons butter
2/3 cup rolled oats
1/2 cup chopped walnuts
pinch salt
Directions
For the filling: Peel the peaches and slice. Pit the cherries. Rinse berries and cherries in a colander and shake to dry. Place fruit in 9 inch pie plate. For the topping: Place butter that has been brought to room temperature into a small mixing bowl. Add the oats, walnuts, and salt. Blend with the butter using a fork. Spread the topping over the fruit.
Bake
350 degrees for 30 minutes. Your cobbler is ready when the fruit bubbles and the topping is golden.
A squeeze of lemon can be mixed in with your fruit before baking if you feel that it lacks flavor. If you have a sweet tooth or your fruit is especially tart, blend in a tablespoon of maple syrup or brown sugar to you topping before baking.
